GDD:
The Game Design Document outlines what the game will be about. It acts as the game's design bible and combines all the creative departments and their methodology for developing the game. It often outlines what the game's overall gameplay goals will be and sets forth how the various levels will be designed. It often also includes descriptions of enemy types, weapons, story, and sound.
GUI:
Graphical User Interface. This is the interface that users interact with on screen. This could be the game's menu system, or some other part of the game that the user interacts with.
